Healthy Summer Wendy Rowe Eat Beautiful

But healthy doesn’t have to mean boring or bland; which is why I love highlighting the season’s most nutrient-packed (and delicious) hero foods so that you can switch things up every few months. Summer is a great time to add figs into your diet. They are full of fibre, so they flush through the system quickly and help to detoxify the skin, meaning they are a great choice if you have psoriasis, acne or other skin conditions. They also add a touch of natural sweetness to dishes, making a healthier alternative to processed sugars. Sold? Fig Salad

Good for detoxifying the system, figs add a touch of natural sweetness, providing a healthier alternative to processed sugars, which can be detrimental to your skin.
Serves 2230 calories per serving
100g burrata or buffalo mozzarella2 fresh figs, quartered2 large handfuls of rocket1 tbsp extra-virgin olive oil1 tbsp balsamic vinegarFresh basil, to serve

Break the burrata or mozzarella into bite-sized pieces and place in a bowl with the figs. Add the rocket and mix well to make sure everything is evenly distributed.
Dress at the last minute, drizzling over the olive oil and balsamic vinegar in a zigzag motion and scatter over basil leaves to serve.
